It's a Soiree

I had a bad tummy attack early this morning and still not feeling well so working from home today. I really think it's my gallbladder but when I had a scan done they didn't find anything.  I think I need to go back and get it checked out again.  The pain was so terrible I swear I almost passed out!!

 It's lunch time and although I don't have much of an appetite who am I not to take a lunch break! So, look at what Pink Paislee and the House of 3 are coming out with! OMG, to die! Their lines along with my friend Margie Romney-Aslett's new lines found on her blog www.margieromney-aslett.typepad.com  are going to keep me busy creating!!

Meet my friend Leslie!

First My Ramblings
Hi there! Well, it's late and the hubby is sound asleep and I can't seem to fall asleep so I am doing a post and setting it up to post at 2pm on Thursday afternoon.  I find that posting late at night when I usually have time to blog is not the greatest time to reach everyone so trying out a different approach ;)

Blogging as some of you have heard me say is one incredible way to meet some incredible friends all around this HUGE world of ours!  I have tried my best to be a good blogger while not allowing it to consume my world as I want my hubby, my full time job and my other hobbies to not be affected by it.

It is so easy to allow this blogging life to not only take over your life but to also allow it to become an obsession to become one of the "popular" bloggers.  I want to be real and not about numbers! I used to blog every day at the beginning but that quickly became a chore and took away from my "real" life I suppose you could say.

And so that is why you don't see frequent posts from me, I need to be sure to be TRUE (my 2011 One Little Word) to myself and my family.  I love the friendships I have formed and appreciate those of you who have chosen to follow me.  I try my best to visit you when I can and drop you a line but I truly hope you understand when I can't ;)

Now onto the good stuff, MEET LESLIE
OK, so anywhooooo.  One of my recent "NEW" blogging friends is Leslie and she awarded me this fabulous award a few weeks ago.  Life happened and so I am just getting to it :(  I came across Leslie through someone else's blog and quickly went off to meet her via her blog.  She is one very TALENTED woman and you should see her Craft Studio HERE!! It's to die for as are her cards that she creates and sells she has a link on her blog to her Facebook page for Posh Paper Sweets.

I really hope you take a few minutes to go and meet her, I promise she won't dissapoint! Oh, and she has the cutest kiddos and lives not too far from me so I am excited to say that I plan on driving to meet her in the next month or so!

So I have to share 8 things about myself that you probably do not know, so here it goes...

1. I am the oldest of 4 kids
2. I am the "bossy" Aunt to my 8 nieces and nephews
3. I was originally born in Monterrey, Mexico
4. I don't have any hint of an accent, well besides a bit of a Texan one now and then ;)
5. I don't know how to tread water
6. I am afraid of rollercoasters (although my hubby has gotten me on a couple to my dismay)
7. It drives me crazy when folks spell to when they really mean too (I have been known to do it too though)
8. I have been employed by my company for going on 25yrs!

Fancy Pants Take 2

OK, I got the OK to share these photos with you so here goes, please excuse the photo quality I have been so off my game! The lighting in my home is terrible and so its always hit or miss!

This is the one that I accidentally inked with vintage photo ink in a spot so then got a little crazy with it trying to make it seem like it was on purpose, LOL.



 And then because I wasn't happy with the ink goof up I had to do another page, LOL
I used pop dots to pop up the pennants, the paper I used had the pennants already laid out so I simply cut it out.  The little card with the "xoxo" is a valentine card from the same line.



My little model is a longtime friends little girl, she had her first birthday in November isn't she precious! Her parents are incredible people and so Addison is one lucky little girl!  She is the little girl whose party I helped decorate and blogged a little bit about here.  And I'm just realizing that I used her photo back then and forgot to ask permission, oops!!

Fancy Pants

I spent ALL day purging in my craft studio and re-arranging it, it seems that I tend to do that often the re-arranging that is!  I got rid of tons of the paper scraps that I had been hoarding for too long!  I also discovered that I am hoarding kits and that is oh so sad!  I am terrible at printing out photos and so I am going to be TRUE to myself and get photos printed weekly so that I can create with them!

On to the layout, I am waiting for the parents of the princess in this layout to approve my blogging her here and so for now I am going to share a small piece of the layout and tell you about my boo-boo!

I decided to ink a small area then it got out of hand and now it looks sort of odd to me with the vintage photo ink all over the page, oh well....

Hello 1.11.11

Well I had to be sure to blog today because of course the date is oh so cool, LOL.  Not much to share, last week I was so busy and so I’m still recovering and taking it easy!  I’m happy to report that I am still keeping up with my Project 365, the photo quality isn’t what I am hoping for but I hope to get some better shots as the weeks go by.  I get home after dark and so haven’t had the best light to photograph in and or very good subjects/objects to photograph.  I am going to try and start taking my camera with me to work and maybe take a few minutes during lunch to find something good to photograph.  We’ll see how it goes!   How is your Project 365 going or maybe your One Little Word going?  Oh and I’m also going to participate in MCP’s Project 52 so I will be back with a link for ya ;)

My upcoming class projects

Well, these next three months will be it for teaching for me, I'm taking a break!  Not sure when and if I will get back to teaching as it drained me and was hard for me since I have a full time job.  It seemed like I couldn't get myself to do all the prep work weeks or months ahead because I wanted to be sure I was using the most current lines at the times I was teaching.  The LSS where I teach is fairly new and I hated to leave but she recently had a bunch of teachers sign on when the other LSS where we all used to teach closed down.  So, decided it was time for me to be TRUE to myself and get back to creating for myself.  I'm excited, it won't be till March however as the new teachers came over the week before we had to comit to the upcoming months and so I had already said I would do this round.  I am tired and ready for the break and look forward to going there as a "regular" customer!  I can't not go there because the owner is AMAZING and a sweetheart and really good people!!  Plus she has a great set up and so starting this month a few of us gals are going to start having a friday night crop there to have fun and create whatever it is we feel like working on :)

Cream Cheese Chicken Enchiladas

When I originally started to make this dish I would take some of the filling and roll it into each of the tortillas sorta like a Fluata (flute) then layer them and the dish looked prettier.  But, over time I found it easier to serve if I cut up the tortillas.  This dish is very filling and a huge hit with my family, it's great served with a small salad or some rice and beans :)  And, I prefer it with the cut onions in the filling as well but when we have kids coming over I omit them incase they don't like the onions crispy texture, yum!


Last night during the House of 3 Live Web show I mentioned that I made some yummy Cream Cheese Chicken Enchiladas over the holiday and so here is the recipe.  Enjoy!

Cream Cheese Chicken Enchilada Casserole


FILLING:
1 med size chicken boiled and pull meat or I often use 4 or 5 chicken breast boiled in chicken broth with bay leaf, garlic powder, salt and pepper then cook till done then drain and shred.
1 med chopped onion (can be omitted for those who don't care for onion)
12oz container of Cream cheese (I use Philadelphia)

SAUCE:
1 cup milk
1 can cream of chicken soup
8oz of your favorite bottled salsa (you can choose a spicy sauce to make it even spicier or if you want you can use Rotel in place of salsa just be sure to blend it up well).

FOR LAYERING:
18 to 20 Corn Tortillas
8 to 12oz of shredded Mexican Cheese Blend

PREPARING CASSEROLE:
Using your bare hands for best results, mix the shredded chicken with onion and cream cheese. Set aside

Mix the milk, soup and salsa well and set aside.

Take your tortillas and dip each one into heated oil to soften them on both sides. Place them on paper towel and blot excess oil as you stack them. Once you are done cut the stack in half then cut the halves in half leaving you with triangles.

Take a 9x13 casserole dish and start lining the bottom with the corn tortillas (the oil in tortillas helps prevent them sticking to dish when baking). Once bottom is covered spread some of the chicken mixture on top (again using your bare hands). Pour some sauce to cover then sprinkle cheese to cover and repeat once again ending with tortillas on top with some sauce and cheese. Cover dish with foil and bake at 350 degrees for 30mins, then pull off foil and bake for another 5mins
